Sugar, starch and carotenes content in squash fruit (cucurbita moschata) in two post-harvest environments

Butternut squash Cucurbita moschata, is a vegetable desired for the nutritional value of its fruits, the pulp is rich in carotenoids, minerals and protein, which makes it attractive for agribusiness processes. The aim of this research was to analyze the content of total carotenes behavior, starch and sugars in the Butternut squash fruit in two controlled environments in post-harvest. The fruits were classified and selected according to morphological parameters of Abanico-75 grow, for 12 weeks in 2 environments (amb.): amb. 1: controlled temperature (16°C) and amb. 2: at environment (28-32°C), three fruits per week and environment were evaluated, with 36 fruits per environment, and an analysis of variance was performed. No significant differences were found between environments (p>0.05) but within each one. We identified that in two environments, at higher starch content, lower content of total carotenes, amb 1: ALweek0-12 14.53%-2.85%, CTweek0-12 202.76 μg.g-1-487.82 μg.g-1; amb 2: ALweek0-12 16.30%-6.35%, CTweek0-12 183.91 μg.g-1-562.32 μg.g-1. At the same time, at higher CT content, higher total sugar content (21.06g/L-28.28g/L) and higher total sugar content, lower starch content. It is concluded that, the association between the variables, carotene-starch, carotene-total sugars and total sugars-starch, are inversely proportional, which allows selecting outstanding genotypes to the detriment of one variable.
